day 353: back to my roots

why? A year ago when I started this blog, it seemed I was always blogging my food. Well for today at least I got back to my roots. I know you have not heard from me and I am sorry I have been out of touch. Believe it or not, I have had a rough week. Just lots of ups and downs and managing a blog amongst other things was a bit hard for me. Regardless, I did take these this week to post specifically. The before are the ingredients and the after was the best cheesy scrambled eggs I had all week and appropriately devoured.

day 14: that's how I cook

day 14:

why? this is how I cook....

After Christmas, I had all this extra ham so I pulled some recipes to see what I could make with it. I found this enchilada breakfast casserole recipe. It looked really good. I filed it away and said to myself, next time I volunteer for breakfast for bible study, I am going to make this casserole. It will be quick, easy, and delicious. When it came time to make the dish, I pulled out the recipe and said to myself... I wonder what would happen if I used sausage instead of ham, and what if I layered the tortilla's instead of rolling them? What about if I added some chile's and salsa for spice. And I will get rid of the potato's because I don't feel like buying them at the store. But I have pinto beans in the cupboard so I will spread those on the tortilla's (which incidentally I forgot to do in the final product). The results are really just how I cook. Note the recipe before I went to work cooking and the recipe afterward.
